Spicy Rosemary Chicken

What you will need: 1 hour to 1 ½ hours of prep, prepare, and cook time


Skinless Chicken 8 thighs or 4 breasts

Salt and pepper teaspoon each

2 cloves of garlic (cut into slices)

2 shallots (cut into quarters)

½ medium white onion

1 tablespoon fresh basil or 1 teaspoon of dried basil

1 tablespoon of Rosemary

Hot mango sauce use the whole bottle (grocery store brand Pickapeppa)


After cutting the garlic, shallots, white onion, basil and rosemary mix and place some in the bottom of a glass baking dish.

Salt and pepper the chicken place in the glass baking dish.

Drizzle the hot mango sauce on the chicken then place the remaining garlic, onion, shallots, basil, rosemary mixture.

Cover with foil and cook at 450 degrees approximately 1 ½ hours when chicken is cooked remove the foil and allow to brown in the oven.

This goes great with $2 buck chuck, or Calloway Chardonnay, or a Pinot Grigio. I enjoyed this meal with Croftwood Estate Chardonnay 2008.


As far as dessert it would go best with apple pie with a scoop of peach ice cream.

What Is a Hot Palate

The Hot Palate by my definition is allowing your appetite to satisfy its craving for spicy foods, giving rise to new tingling sensations to tempt the tongue and entreat the senses.

What will you need: 30-40minutes of prep and cook

Salt and black pepper to taste (more black pepper than salt)

1 Tablespoon Extra Virgin Olive oil

½ lb beef 30% lean

½ lb turkey

Oregano

¼ Cup Soyaki or Teriyaki (Trader Joe’s)

16 ounce can of Fire Roasted Tomatoes (Regular Grocery)

1can El Pato Salsa de Chili Fresca (Regular Grocery)

12 Fresh Ripe Roma tomatoes (Regular Grocery)

2jars of Organic Tomato and Basil sauce (Trader Joe’s)

or 2 large cans regular tomato sauce (Regular Grocery)

1 package of Crimini mushrooms (Trader Joe’s)

½ clove of garlic sliced or minced

½ a sweet onion (brown)

1 package of spinach and chives linguini pasta or Basmati Brown Rice (Trader Joe’s).

The Recipe:

Meatballs (1/2 lb beef and ½ lb turkey mixed together with salt and pepper and oregano)- I like to mix the two meats while adding the salt and pepper. Then make little meatballs. Do not over mix as this can make the meatballs tough, which is not what you are going for.

You can also prepare in a cast iron skillet seasoning the meat as you brown.

This method will make a meat sauce instead of meatballs.

* If you would like to substitute precooked meatballs you can. Use the party size meatballs from Trader Joes these can be added to the beginning of your sauce frozen after the tomato sauce has been added.

Set this to the side in a slow cooker or you can cook them on top of the stove on low heat, in a ¼ cup of soyaki or teriyaki.

The Sauce:

16 ounce can of fire roasted tomatoes

2 jars of organic Tomato and Basil tomato sauce or you can use regular tomato sauce from a can.

12 ripe Roma tomatoes sliced in quarters

Crimini mushrooms 16 ounce package

How to cook and prepare:

As the meatballs are cooking on low heat assemble your sauce.

In a large cold boiling pot add 1 tablespoon of extra virgin olive oil. Turn the pot on medium heat. Add sliced garlic cloves and onion toast until brown.

Add Roma quarters to the pot with a half a can of tomato sauce or half the jar of the organic sauce, continually stirring cook for 6 minutes. Add the remaining portion of tomato sauce (if you are using the party meatballs add them now). Continue to stir.

Add the fire roasted tomatoes, basil, ½ teaspoon of salt, add the El Pato de Chili Fresca and the mushrooms continue to cook for 15minutes, stir as necessary.

Add the meatballs, if you are using the from scratch meatballs. Cook on low heat for an additional 10 minutes.

Boil your water for the pasta. Add the pasta per package directions, drain the water when ready and add 2 teaspoons of extra virgin olive oil mix well. Place the pasta on the plate, add the meat sauce, and if desired top with parmesan cheese

On the Side

Steamed Broccoli florets and for a change from garlic bread try Tandoori Nan (Trader Joes). This dinner works well with Chianti, Cabernet Sauvignon, a nice Spanish red, or even a buttery Chardonnay.

If you have room for dessert then try warm praline pecan torte with a ½ scoop of black walnut ice cream.
